After the recent inaugural launch of Echo In The Night Series. Vol. 1 successfully kicked off with exclusive cross-over with Fisherman Japan at Sushi Hibiki, it’s prime time for another pleasant surprises to tickle the taste buds amusingly.







To do things slightly differently this time round, Chef Makoto Saito Sam decided to fly out his kitchen with freshest catch of the day, together with time-honored aesthetic utensils which he has always cherished to another performance stage at No Black Tie- not only culinary but also a harmonizing and contemporary rhapsody from the quintet who hails from The Netherlands- Henk Kraaijeveld, to deliver several sensuous compositions for an intimate night to behold.








The Dutch is a versatile jazz vocalist and songwriter who is playfully talented in bringing together compelling music with strong lyrics and surprising improvisations, besides fusing stealthy elements alternating between intense and vivacious grooves and harmonies.



Kraaijeveld is always looking to find connections between different styles of music and people, through various layered but accessible music. A cum laude graduate from Utrecht Conservatory in 2012 and studied at Manhattan School of Music, New York with renowned Peter Eldridge, Kraaijeveld has won both jury and audience award at the 10th edition of the Dutch Vocal jazz competition (Nederlands Jazz Vocalisten Concours), for his natural-flowing relaxed performance.

‘Passengers’, is his debut album through his collaboration with pianist and songwriter Daan Herweg.’

  

And the jazzy evening slowly took off sensuously at No Black Tie with moreishly elaborated plates stimulating each and every of your sense as you pair with the right vino of burgundy terroir, in embedding the gastronomic night vividly.

One of the highlight of the day that personally hits my taste bud profoundly were these dainty pieces of sea urchin that is freshly flown all the way from Hokkaido. Each slices of this priced uni is immediately vacuum-packed upon removal from its spiky shell itself before buddled and ready to be shifted over here. That……………………..explains why the extraordinarily profound umami taste form this premium grade uni compared to those usual you have packed n rectangular wooden box. You could really differentiate the taste from its peers, your taste buds won’t lie to you (=

And you thought to yourself that the sweet note finally ended here conventionally………. before your gustatory sense was awakened out of the blue by the chilling but lovely cold ice cream-like nosh delicately hidden underneath the bouncy swirl. Such a pleasant sweet surprise indeed, sugo…..i!! (=

Just dip further down to have it mixed with the berry compote that was glazed underneath the wine glass.

 

In a nutshell, it was definitely one-of-its-kind wine degustation from what I was lucky to experience thus far. Much thanks for the superb culinary execution of elaborated course complemented with melodious tunes echoing throughout blending in the calming zen of the evening. Sugoi gochisou desu ne!!





Sushi Hibiki 鮨ひびき opens everyday except on Monday and also in case there is any public holiday in Japan. Therefore, it’s best to check with the restaurant earlier for reservation beforehand prior to your visit to avoid any disappointment.
