“How is it possible for collagen product to be incorporated into baking?”

That was exactly the first thing lingering in my mind upon seeing such a uniquely themed baking workshop organized by Butterfly Project for the butterflies to try out their skills in baking Berry Souffle Cheese using LENNOX Collagen at ABC Cooking Studio!

A self-proclaimed true-blue lover of dairy products whereby the cheesier, the better. So naturally, I wasn’t really a huge fan of soufflé for it is neither dense nor creamy to my liking. However, such perspective is about to shift after tasting the freshly baked soufflé recipe using LENNOX Collagen which somehow magically transform the light pastry into a very moist dessert yet remains fluffily soft with a ethereal kind of density. That really surprises me!

Alright, let’s first clear out the clouds and start with where this product is coming from.

Essentially, skin is the body's largest and fastest-growing organ that act as the natural body’s main coat for protection. Cake flour-20g

Lennox collagen- 1 tbsp

Egg white-2

Caster sugar-30g [BERRY CHEESE CREAM]

Cream cheese-30g

Caster sugar-15g

Strawberry powder- 1 tbsp

Lemon juice- 1 tsp

Whipping cream- 80g

Lennox collagen- 1 tbsp [TOPPING]

Raspberry-40g

Lemon juice- 1tsp

Fresh blueberry/raspberry-16pcs/8pcs

Minced pistachio-approx

Everyone were seen exciting yet at the same time eager to try their hands on in baking the soufflé themselves under the guidance of skillful staff from ABC Cooking Studio.

After a whirlwind of baking session, each of us gladly presented our own bakery with DIY fruity garnishing of blueberries and strawberries that were both glazed with raspberry jam, for that glistering layer, smitten! (=
