LWIN LEE| INTERLUDE- MALAYSIA'S FIRST TAPAS BAR @ TTDI

Touted as the first international tapas bar in Malaysia, Rabindran, the owner of Interlude also chef from Melbourne, mesmerizes fellow bon vivant with his conscientious creations as most of the dishes are made from scratch. Deriving influence from the French gastronomically, it is no surprise that the maestro often plays around with the culinary sophisticatedly, in search of a well-balanced, if not perfect pitch alchemic notes in food. Therefore, be prepared to tickle your taste buds with marvelous trial-and-tested dishes that have undergone scrupulous iterations by both Chef Rabin and Chef Loges, passionately delivered to you.

17-HOUR SLOW COOKED PORK BELLY (MYR 35)

17-hour slow cooked pork belly, with grated egg and tarragon gribiche inspired sauce
Sauce gribiche is a mayonnaise-style cold egg sauce in the French cuisine, made by emulsifying hard-boiled egg yolks and mustard with a neutral oil like canola or grapeseed. The sauce is finished with chopped pickled cucumbers, capers, parsley, chervil and tarragon. It also includes hard-boiled egg whites cut in a julienne.

Cooked sous vide way-food is sealed in airtight plastic bags and immersed in a hot water bath, the pork skin still remains crispy and tenderly voluptuous with the sliver layer of fat in between the lean meat and skin.

And if you feel like sipping some champagnes, swigging over premium vodkas or down some shooters,  you’ll be spoiled for choices with the extensive list available over here.
