FRESCA MEXICAN KITCHEN & BAR @ THE GARDENS, MID VALLEY
Fresca Mexican Kitchen has been serving classic Mexican cuisine in Kuala Lumpur for close to 5
years now. There are 2 outlets: Fresca at the Gardens Mall (opened
May 2012) and Fresca at Avenue-K Mall
(Nov 2014).
Since they opened the doors, hundreds of
thousands of Malaysians and expatriate families living here have been able to enjoy first-hand unique and wide-ranging flavours of
Mexican cuisine.
The kitchen offers universally-loved Tex-Mex favourites such as fajitas, quesadillas and burritos as well
as the more traditional Mexican dishes including a variety of Tacos, Ceviche
(raw fish cured
in fresh lime), Molotes (Mexican empanadas
like curry puff),
Lamb Stew, Veracruze-style fish
and Carne Asada (steak).
There is emphasis on quality of food and only the
freshest ingredients are used.
Fresca’s salsas
are made fresh
daily (pico de gallo, guacamole, chile con queso,
chile con carne) and its corn tortillas are made from scratch
and
hand-pressed the traditional way using cast iron presses.
We stay true to
the authentic flavours by using imported
Mexican chilis such as ancho, pasilla,
poblano, guajillo,
chipotle and jalapeño.
Fresca was born when two adventure-seeking sisters
(Meng Lim and Jan Lim) fell in love with
Mexican food and the country’s
passion for Viva La Vida
(meaning “Live Life”). Fresca offers a wide
range of Mexican street food in
the form of “Botanas” or
small
plates, easy for sharing amongst
friends and family.

Mexican Cooking Demo

On 18 Feb 2017, guests were treated to a special
one-off cooking demo by Chef BB at Fresca Gardens
Mall. Hosted by co-founder of
Fresca, Meng Lim, participants learnt more about Mexico’s
rich cuisine and
culture.
“The staples of
the Aztecs
(one of the
largest original
ethnic
groups of Mexico) were beans,
corn, chilis and avocados. When
the Spanish conquered
Mexico in
the
1500s, they brought
with them the influence of meats, cheeses and other herbs and spices. The cuisine became
increasingly diverse as a result.
Chef BB
showed the guests how we make our corn tortillas
from scratch and shape them
using
a traditional cast iron press.
These corn tortillas are a staple food in
Mexico and used to make Tacos,
Enchiladas, Burritos
and Fajitas, among others.
Chef BB then showed us
how
we make our signature Ensenada-style fish tacos using the tortillas.
We then
learnt how to make guacamole, a
very popular type of salsa first created by the Aztecs. Guacamole comes from the Aztec translation of “Guac” meaning avocado and
“Mole” meaning sauce.”

gallo, a classic Mexican salsa with
chuncky fresh tomatoes, onions, coriander, red
chili.
Guacamole, an
avocado salsa dip.
Taco Ensenada
(MYR24)
One
of the most popular dishes on the menu.
Originates from Ensenada in Baja California.
Flour tortillas with
battered fish and homemade
coleslaw.
Taco Alambre (MYR25)
Corn Tortillas with
grilled Australian beef sirloin, chopped
Poblano Chiles, onion and crispy turkey
bacon.
Pollo a
la
Parrilla (MYR36)
Grilled chicken fillet on a
sizzling plate in our house special coffee
marinade.
Served with Mexican
green rice.
Churros con Chocolat y Cajeta (MYR18)
Popular Mexican dessert consisting of
donuts rolled in sugar and cinnamon,
served with chocolate
dip
and traditional caramel (made from goat’s milk)
Agua Fresca (MYR9.20)
Non-alcoholic Mexican coolers, known as “agua frescas” (literally “fresh water”) of Lime, Hibiscus and Tamarind.
